Fudge Frosted Espresso Brownies

Ingredients
  • 1/2 cup unsalted butter (1 stick), softened
  • 4 oz bittersweet chocolate, chopped
  • 3 oz unsweetened chocolate, chopped
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon instant espresso powder
  • 1 teaspoon vanilla
  • 2/3 cup unbleached all purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup miniature semi sweet chocolate chips
  • Fudge Frosting:
  • 6 ounces bittersweet chocolate, minimum 70 percent cocoa solids
  • 1 cup plus 2 tablespoons unsalted butter, softened
  • 1 3/4 cups confectioners’ sugar, sifted
  • 1 tablespoon vanilla extract
Instructions
  1. Preheat oven to 350 F.
  2. Melt butter, bittersweet chocolate and unsweetened chocolate in a microwave safe bowl, heating in 30 second increments until smooth. Allow chocolate to cool.
  3. Prepare an 8x8 baking pan by lining it with foil. Spray the foil with cooking spray. Set aside.
  4. When chocolate has cooled, stir in the sugar until well blended. Add the eggs, one at a time, stirring well with a wooden spoon, just until combined. Add in the espresso powder and vanilla and stir until combined.
  5. In another bowl, whisk together flour, baking soda and salt. Add flour mixture to the chocolate mixture and stir until just combined. Stir in miniature chocolate chips. Spread batter evenly into prepared pan.
  6. Bake for 30 minutes. Remove from oven and cool completely in pan on a wire rack.
  7. Make the Frosting
  8. Melt the chocolate in the microwave – 2 to 3 minutes on medium – or in a bowl sitting over a pan of simmering water, and let cool slightly.
  9. In another bowl beat the butter until it’s soft and creamy and then add the sifted confectioners’ sugar and beat again until everything’s light and fluffy. Gently add the vanilla and chocolate and mix together until everything is combined.
  10. Spread frosting on the cooled brownies in the pan.
  11. Lift brownies out of the pan using the foil as handles. Cut brownies into bars.

No-Bake Peanut Butter Pudding Bars
No-Bake Peanut Butter Pudding Bars

Ingredients
  • 1 cup sugar
  • 1 cup light corn syrup
  • 2 cups creamy peanut butter
  • 3 cups Rice Krispies
  • 3 cups Corn Flakes
  • 3/4 cup unsalted butter
  • 4 cups powdered sugar
  • 2 4-serving packages vanilla instant pudding
  • 1/4 cup milk
  • 1 12-oz package semi sweet chocolate chips
  • 1/2 cup unsalted butter
Instructions
  1. Line a rimmed cookie sheet with foil and set aside.
  2. Over medium heat combine sugar and corn syrup in a large saucepan and cook until bubbling at the edges, stirring occasionally. Cook, stirring, one minute more. Remove from heat and stir in peanut butter until melted. Stir in rice and corn cereals until completely coated. Press mixture into the lined cookie sheet.
  3. In saucepan over low heat, melt 3/4 cup unsalted butter. Remove from heat and stir in powdered sugar, vanilla pudding mix and milk. Spread pudding mixture over the cereal layer in the pan.
  4. In microwave or in a saucepan over low heat, melt chocolate chips and 1/2 cup butter. Stir until melted and creamy, spread over pudding mixture in pan.
  5. Refrigerate for one hour to set. Lift bars out with foil and cut into squares or triangles.

Ingredients
  • 2 cups unbleached all purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2/3 cup unsalted butter, cut into cubes
  • 3 eggs
  • 1/2 cup packed brown sugar
  • 1/3 cup sugar
  • 1 cup light corn syrup
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla
  • 1 3/4 cups chopped pecans, divided
Instructions
  1. Preheat oven to 350 F. Line a 13x9 baking pan with foil, spray the foil with cooking spray.
  2. Whisk together flour, powdered sugar, salt and baking powder. Drop the butter into the flour mixture and work it with your fingers until mixture resembles coarse crumbs and begins to stick together. Press evenly into prepared pan and bake for 15 minutes, or until lightly browned. Remove from oven and place on cooling rack.
  3. Whisk eggs in a large bowl until lightly beaten. Add sugar and brown sugar and beat well. Whisk in the corn syrup gradually and then beat in vanilla and melted butter. Fold in 1-1/4 cups of the pecans. Pour filling over the crust in the pan, sprinkle with remaining 1/2-cup pecans.
  4. Bake 35-45 minutes, or until filling is set. Remove from oven and cool on a wire rack.
  5. Lift bars from pan using foil and cut into bars.

One-Bowl Fudge Brownies with Peanut Butter Frosting

Ingredients
    Brownies:
  • 1/2 cup unsalted butter
  • 3 ounces unsweetened chocolate, coarsely chopped
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2/3 cup unbleached all purpose flour
  • 1/4 teaspoon baking soda
  • Frosting:
  • 2.5 ounces cream cheese, at room temperature
  • 2 tablespoons (4 ounces) unsalted butter, at room temperature
  • 1 1/4 cups confectioners’ sugar, sifted
  • 3 tablespoons smooth peanut butter
Instructions
  1. Melt butter and chocolate in a large bowl in the microwave for 1 minute. Stir, continue heating at 20 second intervals until chocolate is completed melted and smooth. Allow to cool.
  2. Preheat oven to 350 F and line an 8x8 baking pan with parchment paper, allowing parchment to hang over the sides.
  3. Add sugar to the chocolate and stir until combined. Add eggs and beat with wooden spoon or rubber spatula until combined. Stir in vanilla. Stir in the flour and baking soda just until combined.
  4. Spread the batter into the prepared pan and bake for 30 minutes. Allow to cool completely in the pan on a wire rack.
  5. Prepare the Frosting
  6. Combine butter and cream cheese in a medium mixer bowl and beat until creamy. Gradually add the powdered sugar a cup at a time, mixing thoroughly after each addition. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes. Add the peanut butter and beat until thoroughly blended.
  7. Frost the brownies while still in the pan. Remove brownies from pan by lifting the sides of the parchment and place on a cutting board. Cut into bars.
