Lamb shank confit with thyme, red pepper and zucchini |
ingredients:
- Lamb shank : 4
- Minced garlic 1
- Clove minced onion 2 c . soup
- Olive oil 3 c . soup
- Honey 1 tsp. tea
- Fresh thyme 3 branches
- Salt 1 c . coffee
- Round zucchini quartered 500 g
- Roasted red pepper , peeled and cut into strips 100 g
preparation:
In a heavy-bottomed saucepan over low heat , brown the lamb shanks in olive oil. Add garlic , onion , salt , thyme and honey. Moisten with water until halfway up and cook for 10 minutes over medium heat , reduce heat and simmer over low heat until the meat becomes creamy . Remove the lamb shanks from the pot and strain the sauce .
Place the vegetables in the sauce and cook for 15 minutes over low heat. Arrange the lamb shanks in the dishes , garnish with vegetables and drizzle with sauce.
